Spring Rolls

Ingredients
12 pcs spring roll wrappers, fresh or dried
2 cups cabbage shredded
1 cup carrot, matchsticks
1 cup red bell pepper, julienned
1 cup green bell pepper, julienned
2 Tbsp coconut oil
1 Tbsp oyster sauce
2 tsp soy sauce
1 tsp lime juice
1 tsp garlic powder
Salt to taste
Directions
- Heat 1 Tbsp coconut oil in pan, then add cabbage, carrot and red peppers. Add oyster sauce, soy sauce, lime juice, garlic powder and salt to taste.
- Cook until lightly wilted but still crunchy, drain excess liquid and set aside in the fridge to cool. Once cooled, remove filling and proceed to the next step.
- Place a spring roll wrapper on a flat surface (if using dried wrappers, soak the wrappers in water for about 30 seconds until slightly soft, then lay on a flat surface).
- Spoon 2 heaping tablespoons of filling across the wrapper just below the centre line, leaving about 4cm on each side. Fold up the bottom corner tightly over the filling. Then fold in the sides, and tightly roll the wrapper away from you.
- Brush with coconut oil and set aside.
- Preheat the Birkeshire Air Fryer to 200°C while making the other rolls.
- Carefully place each roll in the air fryer basket/tray and cook for 5 minutes until brown.
- Then turn the rolls over and cook on the other side a further 3-5 minutes until done.
- Carefully remove the rolls and serve with salad and dippping sauce of your choice.
